Apple Crumble

INGREDIENTS

  • 5 organic apples
  • 1 cup gluten-free rolled oats
  • ½ cup chopped walnuts (or other nuts/seeds)
  • ¼ cup maple syrup
  • 2 Tablespoons coconut oil, melted
  • 1 Tablespoon lemon juice
  • Pinch of sea salt
  • 1 teaspoon cinnamon

METHOD

Preheat the oven to 375 degrees F. Wash, core and slice the apple (keep the skin on for extra fiber). Toss with lemon juice and cinnamon. Set aside.

In a small bowl mix oats, chopped nuts, coconut oil, and melted honey until well combined. In a

small saucepan over medium heat, begin to cook the apples. Add more water to prevent sticking or burning. Cook for about 6 minutes (or more if you like softer apples).  Put the cooked apples in a pie pan and top with the oat and nut crumble.  Bake for 5 minutes, or until topping is browned.  Enjoy!
