Save the Moo Macaroni Pasta

A dairy-free swing on ‘mac-n-cheese’.  One of my quick go-to favorites.

INGREDIENTS

2 cups water
1 cup brown rice pasta
¾ cup coconut milk
½ onion
3 tablespoons nutritional yeast
2 tablespoons tahini
1 teaspoon lemon juice
1 clove garlic, minced
½ teaspoon sea salt
optional: sundried tomatoes and fresh spinach
 

DIRECTIONS

In small saucepan over high heat bring the water to a boil.  Add pasta and cook according to package directions.  In a skillet, sauté garlic and onions for a few minutes.  Drain pasta.  Add coconut milk, tahini, sautéed onions, garlic, lemon juice, and sea salt and stir to combine.  Add spinach and sundried tomatoes.
