Dandelion Green Pesto

Who says pizza isn’t healthy?  I’m good at stepping outside the lines of tradition, and that’s what gives my pizza a healthy twist.

Pizza should be topped with whatever you like, but here’s some of my favorite combinations (minus the cheese or nutritional yeast – my dairy free ‘cheese’) :

  • sun-dried tomatoes + spinach + mushrooms + onions
  • fresh tomatoes + kale + onions + hummus
  • dandelion green pesto + sweet potatoes + onions + fresh tomatoes

Dandelion Green Pesto

INGREDIENTS

  • 1 cup dandelion greens
  • 1 cup walnuts
  • 1/2 cup nutritional yeast
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic
  • sea salt to taste
  • water, for consistency

METHOD

Soak the walnuts for at least 30 minutes, and drain the water off.  Add all ingredients to a high powered blender like a Vitamix and blend until smooth.  Add water for desired (thicker) consistency.  Spread over your favorite cooked crust and add other toppings – Enjoy!
